Cost &Efficiency in the Kitchen: Homemade Vanilla Almond Butter


As of just about last summer, I’d fallen in love with almond butter.  However, nuts and nut butters are high in fats. Yes, they are healthy fats, but just because something is good for you doesn’t mean you should eat it in excess. You’re actually just cancelling out the benefits in doing so. MODERATION!

This being said, I still love my share (healthy portion) of almond butter!

I’ve been buying my almond butter from the health food store where you can “make your own” by placing raw almonds into a large, noisy machine that grinds out a slightly gritty yet creamy and, of course, delicious nut butter. However, I’ve read a lot of posts for a more cost effective way to make your own.

If you have access to a health food store where you can buy your almonds in bulk – do it! Making your own almond butter requires patience, so if you’re in a bit of a hurry – save it for another day!

Homemade Vanilla Almond Butter

1 Cup Raw Almonds* (I toasted, but you can make with raw nuts)
1 teaspoon Vanilla
Sprinkle of Sea Salt


*To toast the almonds, add to the frying pan (DRY) and let toast for about 5 minutes until fragrant and browned, tossing/mixing frequently. Don’t overcook!

After allowing to cool, add almonds to food processor and blend away! I failed to take my own photos of the process, however the Rawmazing Blog has a great description of the blending process. Make sure you scrape the sides every so often which will help keep all the almonds incorporated and give your food processor a second to cool down a bit. You may think it’s done when it rolls up in a ball and makes a funny noise, but it is not, so be patient! Let it get nice and creamy.

Add your sea salt and give it an extra pulse. Wait until you take the almond butter out of the processor and into a jar/container to add the vanilla and mix it up. Vanilla bean may be a great inversion here to amp up the flavor. Feel free to add a little more extract if you like a stronger flavor!

You can add other flavors like honey or cinnamon to make it your own as well!
